NOVA Attends Annual Military Culinary Arts Competition

On March 11, Chef Mike Herbert and NOVA food purchaser, Sean McCarthy, took a group of culinary students to Fort Lee in Petersburg, Va., for the 39th Annual Military Culinary Arts Competition. The students were amazed by the skill and artistry of chefs from the branches of the military. The displays included pulled sugar work, chocolate and tallow carvings, aspic-covered cold food presentations, pastries and cakes, and hot food presentation plates. The students also witnessed the team competition as they prepared meals in U.S. military field kitchens, the hot food market basket competition and the array of foods available to the troops in the field. NOVA students learned quite a bit about color, composition and flow, and how they can apply it to their culinary presentations. Everyone agreed it was a very fun and worthwhile endeavor.

  1. What a great opportunity! I very much enjoy watching these competitions on television. I am a non-professional baker and would have enjoyed seeing this competition myself.

    Taking students out of the ‘kitchen’ and having them watch others is a wonderful learning tool. I bet they all enjoyed themselves. I sure would have!
