On February 11, Chef Mike Herbert, assisted by NOVA culinary student Bruce Atkinson, conducted a presentation of icings and frostings for the seventh annual Chocolate Extravaganza in Warrenton, Virginia.
Herbert started with French buttercream, then proceeded to demonstrate coconut – pecan icing for German chocolate cupcakes. As the guests savored these delicacies, Herbert then prepared seven-minute frosting, a cooked egg white frosting. Caramel frosting rounded out this production of unique cooked icings and frostings. As one guest in attendance remarked, “This is my second year to attend this event, and I hoped you would be here! I learned so much from you last year!” Besides Herbert’s presentation, the event featured donated chocolate delights from local restaurants and bakeries, a silent auction and chocolate tastings.
Ed and Carol Hamann host this event in memory of their daughter Jenna, who lost her battle with cancer years ago. All proceeds benefit the American Cancer Society as part of the 4Jenna Relay for Life Team.
